- 3 ½ cups (420 grams) powdered confectioners sugar
- 1 ½ teaspoons (7 ml) vanilla extract
- Chocolate Layer:
- 2 cups (360 grams) chocolate chips or chunks
- 1 tablespoon (14 grams) butter or coconut oil
Instructions
- Make the peanut butter layer: Place butter, peanut butter, powdered sugar, and vanilla extract in a large bowl. Beat with an electric mixer until smooth. The dough will be thick and slightly crumbly.
- Press into pan: Line a 9×13-inch pan with parchment paper. Transfer the peanut butter dough into the pan and press firmly.
- Melt the chocolate: Combine chocolate chips and butter in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until smooth (about 1.5 minutes total).
- Top and chill: Pour melted chocolate over the peanut butter layer and spread evenly. Let sit at room temperature until set (30-60 minutes). Lift bars from the pan using parchment paper, slice, and refrigerate for at least 1 hour before serving.
Notes
- Store in an airtight container in the refrigerator for up to a week.
- For firmer bars, chill longer before slicing.
- Use natural peanut butter for a slightly different texture.
