A delicious and moist banana bread with the rich flavor of brown butter and pumpkin.

- 1/2 cup butter, browned
- 1 cup light brown sugar, packed
- 2 large eggs, at room temperature
- 1 1/2 teaspoons pure vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon pumpkin pie spice
- 1/2 cup pumpkin puree
- 2 medium bananas, very ripe and mashed
- 1/4 cup sour cream
Instructions
- Preheat your oven to 350°F (175°C). Generously grease a 9×5 inch loaf pan and set it aside.
- In a large bowl, whisk together the browned butter and light brown sugar until well combined. Add the eggs and vanilla extract, mixing thoroughly.
- Add the all-purpose flour, baking soda, salt, and pumpkin pie spice to the wet mixture. Stir gently until just combined.
- Gently fold in the pumpkin puree, mashed bananas, and sour cream until evenly distributed throughout the batter.
- Pour the batter evenly into the prepared loaf pan. Bake for 60 minutes or until a toothpick inserted in the center comes out clean. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Use very ripe bananas for the best flavor.
- Do not overmix the batter to keep the bread tender.
- Store leftovers in an airtight container at room temperature for up to 3 days.
